Cajun Rice for 6 to 8

chop, slice, mince or dice
red onion, 1/2
carrots, 2 large
celery, 2 or 3 stalks
garlic, 3 to 5 cloves
jalapeno pepper, one, seeded (use gloves or handle the pepper from inside a plastic bag to protect your hands)

add the spice and stir the rice:
add the vegetables and stir constantly 3 - 5 minutes over medium heat:
2 cups brown rice
1 Tablespoon ground cumin
1 Tablespoon ground coriander
2 teaspoons chili powder

add, cover pan, lower heat, and simmer 15 mins:
4 cups vegetable boullion
1 bay leaf

add and simmer 15 more mins or until done, adding more liquid as necessary.
red beans: 1 16-oz can (cup and a half)
chopped tomatoes 1 16-oz can
half cup canned or fresh corn kernels (about 1 ear).
1/2 teaspoon salt

add, stir and serve:
3 Tablespoons fresh parsley
3 Tablespoons fresh cilantro

note: if you used white rice instead of brown, your cooking times will be shorter for the beans/tomatoes step.
